Laboratory
Control at all stages of production is carried out in accordance with the international system HACCP. Its use reduces the risks posed by potential food safety issues.
The certified production and technological laboratory monitor the quality of incoming raw materials, the progress of the technological process, storage of products in warehouses, disposal of production waste, and the sanitary condition of production facilities.
Among the laboratory equipment of the plant, the following items can be distinguished:
- 3 chromatographs, manufactured by Chromatek company (Russia), allowing to investigate trace impurities both in spirits and distillates, and in vodka, cognac, whiskey, etc.;
- atomic adsorption spectrometer, manufactured by Lumex group of companies (Russia), allowing to monitor the content of toxic elements in alcoholic and non-alcoholic beverages;
- high-speed distiller for spirit distillation, manufactured by Gibertini Elettronica s.r.l. (Italy), which reduces the operating time with one sample by 4 times.
The enterprise also carries out organoleptic control of production. It is based on determining the quality of products using the human senses, which serve as a control device. At the distillery, tasting commissions are organized, consisting of specialists, among which there are certified tasters who have certificates of training at All-Russian Research Institute of Brewing, Alcoholic and Wine Industry.
